It’s been too long since I last made an entry here- WAY to long. I apologize. I have no excuse other than an overused one- sheer exhaustion! I know that is kind of lame, as we all suffer from that and when one is in the process of ramping up a new business, exhaustion is part of the deal, isn’t it? Aren’t you supposed to slave away night and day to get yourself up and running toward success faster than the next guy?

For some, the answer may be a quick, “YES!” For me, it’s a tad more layered.

You see this endeavor is more than just about financial success. Yes, I want it to be a financial success. Why wouldn’t I want to support myself and family well doing what I love? Isn’t that a no brainer? However,I also desire my work to be a creative SERVICE to the folks that trust me to capture a treasured moment in their lives. I want to show them something different about themselves; make them feel good.

Anyway… Since I have a brain that is constantly in motion (which is a good thing, AND a bad thing), I had been running at break neck speed procuring quality products worthy of my clients and my BRAND, brainstorming new shoots, new locations and trying to get my community “give back” project started, all while working full time and trying to spend time with my very patient family and friends! Needless-to-say, Calgon wasn’t going to cut it for me. I needed something a bit stronger.

Enter:
Two weeks vacation in the beautiful coastal southern city of St. Augustine, FL. I am in love!

Here’s the famous St. Augustine Lighthouse and Castillo de San Marcos

The Lighthouse and castle / fort are reputed to be haunted. Ghost Hunters did a show on the lighthouse. I am sad to report that I had no spine tingling during my visit…

I did have some fabulous food, including the BEST Cuban sandwich I’ve had in many years at La Herencia Cafe, in downtown St. Augustine.

I even snuck in a Cuban coffee- delicioso!

The highlight, of course, were the powdery sanded beaches that had the most exquisite ocean water…

See? I highly recommend it! We love it so much, we are contemplating buying a vacation getaway- it’s serious, I told you! So, it is with smooth darkened skin that I return to the business of capturing fine images and making memories with you all. I have fabulous new ideas, products and laughter to share. Cuban Coffee (Cafecito)

Ingredients

Espresso Ground Coffee
1/4 Cup Sugar
Stovetop Espresso Maker

Preparation

Fill a 6-cup stovetop espresso maker with water and coffee, making sure to pack down the coffee. Use moderate heat. While the coffee is brewing, place the sugar in a tall container with a spout, such as liquid measuring cup. As soon as the coffee starts to fill the reservoir, pour about 1/2 tablespoon of coffee over the sugar and return espresso maker to heat.

Technique

Making the sugar crema is the technique that defines Cuban coffee. You cannot overbeat the sugar, so err on the side of beating too much. If you accidentally pour too much coffee into the sugar, continue with the beating process, as you will still achieve sugar foam.
